What to eat Today

I found this great little Bakery while out with my girlfriend on a shopping date.  Rose 32 Bread and  it's in Hardwick, MA .  Absolutely Hands Down the best sticky roll I have ever eaten!
This place is an absolute MUST TRY if you are out and about the Central MA area!




Wednesday's are usually a pretty busy day for me.  
Homeschool with my 10 year old daughter in the morning then usually heading out with a friend for the afternoon so planning a meal for dinner is usually done on Tuesday or something pretty simple that can be put together quickly Wednesday afternoon.  

Yesterday I took out a pre-seasoned whole chicken from the freezer that I got a few weeks ago on sale because the Sell By date was coming due.  I think I got 2 chickens for $3.00 each. and then just froze them as soon as I got home.  I find a lot of good deals on meats and poultry when I shop the grocery store coolers for "sale stickers" that they usually post on the package when the sell by date is coming due.  Then I just freeze the items right away or use them asap.   Stop n' Shop and Hannafords are both stores that I know do $1-$5 off stickers on their meats & poultry when they get close to their dates.  

Yesterday afternoon I put the whole chicken in the crockpot and turned it on High for the rest of the day.   I had some bread that we bought from a bakery in Boston over the weekend that got a little hard and stale so I cubed it up in a glass covered dish and left it for today out on the counter.  Last night the chicken was cooked perfectly with no need to add anything since it was already pre-seasoned.  I pulled off all of the meat and put it in a glass covered storage container and popped it in the fridge.  I strained out all of the juices in the bottom of the crockpot and saved those in another glass container to use in my gravy. 

So today I have everything ready to make a quick, hearty Chicken in Gravy meal with Stuffing and Mashed Potatoes and it should only take me about 20 mins to make it. 





These are the ingredients you will need to make this meal that serves about 4-6:

Stuffing:
 3-4 cups stale bread cubed
1/2 C butter
1 1/2 C chicken broth or stock
Fresh Cilantro
Fresh or dried basil
salt & pepper
Seasoned Salt (I use Tastefully Simple)

Chicken in Gravy:
2 C chopped chicken
1 C chicken stock or broth
1 package Chicken gravy mix

Mashed Potatoes:
3 large baking potatoes
3/4 C milk
1/4 C butter
salt & pepper

Veggies: 
either canned or frozen peas, carrots, etc. 
canned cranberry sauce
  This was my husbands plate..... mine was obviously smaller....LOL

I had enough leftovers for 2 Meals for my husband to take to work and 1 smaller meal for my daughter to have for lunch tomorrow!
